Avocado with Black Bean and Corn Salsa
Ingredients:
3 Ripe, Fresh Avocado, (halved and pitted)
1/2 cup Black Beans, (canned)
1/3 cup Corn Kernels (frozen)
1/4 cup Red Pepper, (diced)
2 tbls. Vinaigrette Salad Dressing
2 tbls. Scallions, (sliced)
Salt, (to taste)
12 Fresh Cilantro Leaves (optional)
Procedures:
1. In a small bowl, combine black beans,
corn, red pepper, scallions and salad dressing. Season
with salt, if desired.

Top avocado halves with black bean and corn mixture, dividing
ingredients evenly. Garnish with cilantro leaves if desired.
Notes
& Tips:
Large avocados are recommended for this recipe. A large
avocado averages about 8 ounces. If using smaller or larger
size avocados, adjust the quantity accordingly.
