Corn Arepas
By Robert Sapirman - Parcel 104, Santa Clara, CA


Serve (as an hors d'oeuvre)

Ingredients:
2 T brown sugar
7 oz. corn flour
2 eggs
1-1/2 C water
1 C smoked white cheddar
1 T kosher salt
Oil

Procedures:
Heat water with sugar and salt until sugar dissolves. Sift in flour a little at a time until it forms a smooth dough. Add eggs, one at a time. Fold in cheese.

Lightly oil hands and form small balls of dough, 2ñ3 inches wide. Flatten balls to about 1/4-inch thick. Pan fry in oil until crispy. Serve hot.
