Ingredients for the chocolate
squares:
1 C + 1 T cream, Organic Clover
Stornetta Farms
7 oz. chocolate
1 stick soft butter, Organic Clover Stornetta Farms
1 T honey or corn syrup
Procedures:
Scald cream, pour over chocolate and mix until chocolate
is melted.
Add
butter at 100† F and mix until fully incorporated.
Add
honey or corn syrup at 70† F and mix until fully incorporated.
Cast
in a pan and allow to crystallize for 48 hours.
Ingredients
for the tempered couverture:
1 lb. high-quality chocolate, melted
To
Serve:
Cut chocolate into squares and dip in tempered couverture.
Allow chocolate to set and serve.
