Strawberries and Mixed Greens with Strawberry Vinaigrette

Ingredients for the salad:
1/3 C toasted pine nuts
4 oz. organic baby spinach (about 4 C)
4 oz. organic baby arugula (about 5 C)
2/3 C organic strawberries, cut into quarters
3/4 C crumbly goat cheese
for the vinaigrette:
1/3 C organic strawberries, cut
into small pieces
3 T orange juice
2 T white wine vinegar
1/3 C extra virgin olive oil
Salt and black pepper to taste
Combine strawberries, orange juice and vinegar in a blender.
With motor running, add the oil in a slow, steady stream
and blend until smooth. Add salt and pepper to taste.
Just before serving, place salad ingredients in a large
bowl. Drizzle with some vinaigrette and toss gently to
coat, then taste and add more vinaigrette, if needed.
