Hunt Cellars 2005 Cloud 9 Cabernet Sauvignon / Paso Robles
At Hunt Cellars, winemaker David Hunt, has an artistic side too. Alas, David lost his sight in 1989, so his expressions of art come in the form of his winemaking and his music. As a musician, he plays at his own winemaker dinners and indulges his passion for music by bestowing his wines with musical titles. Despite his blindness, David can still appreciate the beauty of Paso Robles. For him it comes through in the soil, the weather, the water and ultimately in the wines.

A truly special wine, the intoxicating nose is lush with ripe fruit aromas, including plums, currants, and cherry jam. Each sip delivers a lovely blend of dark plum, cassis, cherry, and strawberry jam. Elegant tannins make the wine velvety smooth, but it still has a very nice depth. Winemaker David Hunt deserves notice for this bottle.

Hunt Cellars 2005 Rhapsody in Red / Paso Robles
A dDavid spent years looking for the perfect venue for his wines and eventually settled on a uniquely beautiful property of over 550 acres in the foothills and mountains of Creston. This area met David's criteria for topography, soil composition, unparalleled beauty, and ideal terroirs - its varied elevations and mineral soil composites mirror some of the world's great wine regions.

A blend of Cabernet, Merlot, Cabernet Franc, and Petite Verdot that invites wine lovers in with a lovely nose of cherry, blackberry, and mocha notes. The layered palate brings soft fruit flavors of blackberry, wild cherry, dark chocolate, and earthy notes. An elegant wine that pairs very nicely with red meat, enjoy a bottle with an indulgent prime rib.

Hunt Cellars 2005 Bon Vivant Cabernet Sauvignon / Paso Robles
When The Hunt Family decided to pursue their dream, they were uncertain where they would choose to build their vineyard. The Hunts spent exhaustive days and weekends traveling to various premium wine regions from Oregon, Washington, and throughout the state of California. They finally narrowed their decision down to the Central coast to San Luis Obispo County in California. Paso Robles was selected because of its rich diversity in soils, superb growing climate, and unique styles of wine making, along with the spirit of graciousness and traditional American values.

Another excellent Cabernet from Hunt Cellars, the fruit was sourced from the "Derek Heights" Section of Destiny Vineyards. A freshly swirled glass releases rich aromas of sweet bing cherry, strawberry, currants, and a touch of oak. A sip, and flavors of raspberry, cherry, currants, and hints of vanilla drift over the palate. With gentle tannins and a nice round mouthfeel, the wine is quite elegant. Treat yourself to a bottle or maybe even two.

Swirl a glass, and take in the layered aromas of cherry, plum, toasty oak, and a hint of chocolate. Bold tannins carry rich flavors of dark cherry, blackberry, and currants that build to a powerful oaky finish. Fans of bolder, oakier Cabernet will really enjoy this wine now, but cellaring a bottle for ten years will truly bring out the full expression of this wine. Aged correctly, it could be a 95.

Hunt Cellars is an extraordinary place. Hunt Cellars produces boutique quantities of almost all red wines that win a disproportionate number of awards. David Hunt, the owner and winemaker is blind, but he plays the piano and names most of his wines after musical terms. David says that blindness makes his palate and nose extra-sensitive.

This is not your typical California Chardonnay. The nose has many layers with warm tropical aromas of pineapple, mango, butterscotch, and peach. A sip fruit reveals flavors that mirror the nose with oak influence producing notes of toasty vanilla. The mouthfeel is quite round and lush, with just a touch of acidity and a elegant, dry finish.

Winemaker David Hunt delivers another memorable wine with this Syrah. Swirling a glass opens up luscious fruit aromas of cherry, raspberry, and plum, before moving into notes of dark chocolate and black licorice. The palate is brimming with elegant flavors of blackberry, plum, and cherry that finish with a soft hint of pepper. Families enjoying pork tenderloin or lamb for a holiday dinner would do well to compliment their table with a bottle.

The Hunts spent exhaustive days and weekends traveling to various premium wine regions from Oregon, Washington, and throughout the state of California. They finally narrowed their decision down to the Central coast to San Luis Obispo County in California. Paso Robles was selected because of its rich diversity in soils, superb growing climate, and unique styles of wine making, along with the spirit of graciousness and traditional American values.

This is a unique Sauvignon Blanc, with a memorable nose highlighted by toasted coconut, ripe mangos, and lemon custard. Quite crisp and possessing a vibrant acidity, the wine delivers a layered palate. Tropical notes of pineapple and mango blend with nuances of dried apricot and dusty oak. Grilled swordfish or halibut would make excellent companions to a bottle.

Hunt Cellars 2001 Tawny Cabernet Sauvignon Port / Paso Robles
The Hunt Family decided to name their vineyard, "Destiny Vineyards, in honor of their new baby girl they named Destiny who was born in 1996. Destiny Vineyards first planting consists of: Cabernet Sauvignon, Sangiovese, Sauvignon Blanc, Merlot, Syrah, Petite Syrah, Cab Franc, Viognier and Zinfandel, and In 1997 they began producing their first releases of memorable wines.

This Tawny Port is very reminiscent of a ruby port. The nose is quite fruit driven. Aromas of cherry, plum, and currants dominate, while subtle notes of dark and milk chocolate linger beneath. Black cherry and plum flow into smooth chocolate and vanilla notes on the palate. Pair this with decadent homemade fudge and enjoy.

In 1997, Hunt Cellars began producing their first releases of memorable wines. Experience has taught the Hunts that in order to make great wines, you must simply have the best fruit. At Hunt Cellars, they believe passion, hard work, and never giving up until all the components and structure are present to give their wine the varietal character, flavor, and velvet finish that has become their trademark.

This bottle is a fateful blend of Zinfandel and Cabernet Sauvignon that is not soon forgotten. Ripe cherry, rich strawberry, and blackberry jam dominate the nose, with hints of honey and spice lingering in the background. The palate is silky smooth, the same berries reappearing alongside lovely accents of spice, tobacco, and cocoa. An excellent food wine, paired very nicely with a Mediterranean pizza.

Winemaker David Hunt provides some mystery with his secret blend of five white varietals. Honeysuckle, peach, apple, lychee nut, vanilla, pineapple, and pear all rise from a very layered nose. A sip delivers a similar parade of flavors as the apple, apricot, pineapple, and pear meld with honeysuckle, sweet spice, and hints of vanilla. Fans of wines with well-balanced sweetness will surely enjoy this one.

Fans of this varietal may want to stock-up on this one. A lovely nose offers layered aromas of blueberry, plum, clove, bacon, and spices. Despite its chewy nature, the palate is quite smooth, with flavors of cherry, blueberry, plum, bacon fat, and coffee that unfold with each sip. Pair this with a hearty roast beef and enjoy.

A Super Tucsan blend of Sangiovese, Merlot, and Cabernet Sauvignon, Cab Franc, and Petite Sirah, it expresses great the varietal character of Sangiovese with superb complexity added by the French grapes. Layers of fruit aromas rise out of a freshly swirled glass, with blackberry, cherry, strawberry, plum, and raspberry melding with soft hints of butterscotch. A sip brings the same rush of layered fruit, which builds to a finish of spicy oak. Nicely balanced and quite smooth, this wine is perfect for any special occasion.

Destiny Vineyards first planting consists of: Cabernet Sauvignon, Sangiovese, Sauvignon Blanc, Merlot, Syrah, Petite Syrah, Cab Franc, Viognier and Zinfandel, The Hunts decided to build a "Tasting Room" for their premium wines, which was opened in October of 1999.

The Italians should take notice: Hunt Cellars delivers a memorable effort here. Bright, ripe strawberry, raspberry, and cherry dominate the nose, with complicating notes of butterscotch, spice, and leather rounding out the bouquet. The lush red berries return on the palate, unfolding into hints of caramel, smoky leather, and spice. Very elegant and with great depth, this is a perfect wine for any holiday Italian dinner.

Sourced from the Mt. Christo block of Hunt Cellars' Destiny Vineyards, this is a wine of nice depth and robust structure. A freshly swirled glass exudes springtime floral aromas, with bold notes of cherry, clove, and cassis. Soft and smooth on the palate, flavors of cherry and blackberry move into hints of dark chocolate that build to a spicy, oaky finish. A bold wine now, in ten years, it could be in the 94-95 range as it has all the right elements to age very well.
