Rib Eye Steak with Cumin-Spiced Potatoes, Sauces of
Red Bell Pepper and Orange Cauliflower, and Topped with
Crispy Onions

Ingredients
for the rib eye steak:
2-3 lbs. rib eye steak
Salt and pepper
Procedure:
Grill rib eye to desired doneness. Season with salt
and pepper only.
Ingredients
for the purple, red and Yukon gold potatoes roasted
and spiced with cumin:
1 T ground cumin
2 t salt
1/4 t cayenne pepper
2 purple potatoes
2 red potatoes
2 Yukon gold potatoes
2 oz. butter, melted
Procedure:
Combine dry ingredients and set aside. Melt butter and
set aside.
Wash
and dry potatoes; do not peel. Slice potatoes 1/4-inch
thick. Brush potatoes with butter and sprinkle with
cumin mixture. Bake in 375° F oven for 20 minutes
or until potatoes are tender.
Ingredients
for
the red bell pepper sauce:
12 red bell peppers, grilled
1 T olive oil
1 yellow onion, small diced
2 t garlic, chopped
2 stalks celery, small diced
1 small carrot, small diced
1/2 C water
1/4 C heavy cream
Salt and pepper to taste
Procedures:
MGrill peppers whole until lightly charred. Remove to
a bowl to cool. While peppers are cooling, sweat onion,
garlic, celery and carrot in a large saucepan in olive
oil.
When
peppers are cool enough to handle, remove stems and
seeds but retain as much of the juice from inside as
possible. Remove skin from peppers and place them in
saucepan with sweated vegetables and 1/2 cup water.
Blend
mixture until smooth using an immersion mixer, adding
water as needed. Adjust seasoning with salt and pepper.
Bring to a boil and reduce to a slow simmer. Stir in
cream just before serving.
Ingredients
for
the orange cauliflower sauce:
1 head orange cauliflower florets
1 C heavy cream
1/2 C milk
1 t salt
1/4 t white pepper
Pinch nutmeg
Procedure:
Boil cauliflower until tender, then drain liquid. While
cauliflower is cooking, heat cream and milk until hot
but not boiling. Add hot cauliflower florets and remaining
ingredients to the hot cream. Using an immersion blender,
blend until smooth. Thin with milk if needed.

the crispy onions:
1 onion
Flour
Procedures:
Slice onion, dip in flour and fry.
To
serve:
Place sauces side-by-side on plate. Place potatoes on
the sauces, the steak on the potatoes and top with crispy
onions.
