Good News, Everyone Created by Matt Gumm (The Waiting Room, Portland), inspired by his best friend Ben. "This cocktail is a bit of an homage to my best friend, Ben Diller. I selected the duck fat and the tobacco because they remind me of a pretty dark but incredibly important part of my adult life. I unexpectedly lost my father within 6 months of Ben losing his mother. Amongst all of this the two of us were trying to finish school, and because of his mother's passing Ben ended up taking custody of his 13 year old sister. We would spend many nights back then commiserating over some really amazing meals cooked by his father followed by drams of whiskey and cigars on the porch. Ben helped raise his sister and aside from being a better friend than I deserved at times has really just been a grounding presents and a role model for me. Whether he ever intended to hold that space in my life or not, I'm eternally grateful to have him in my life." Recipe Ingredients: 1.5 oz Duck fat washed Russell's Reserve 6 Year Old 0.75 oz Campari 0.5 oz Cynar 0.5 oz Cinzano Vermouth 1 dash orange bitters 3 drops dark chocolate bitters Method: Add ingredients into mixing glass with ice. Stir for approximately 12 seconds. Strain into smoked double rocks glass over 1 large cube. With expressed orange peel for garnish. To smoke glass. Add a pinch of Virginia #1 pipe tobacco to a place light with torch until smoldering and cover with double rocks glass. Allow glass to fill with smoke as you are building cocktail. Discard after cocktail is made. He is hardworking, part farmer, part carpenter, part painter, opinionated, and stubborn as all hell. He taught me about work and respect as a kid (he had to work on the respect part double duty).
