RECIPE

Beer Battered Oysters / Granville Island
By Executive Chef Robert Clark, C Restaurant,
Raincity Grill and Nu Restaurant

Note: lager pipette will be needed

Ingredients:
6 Whole Oysters (lightly poached)
1 cup Flour (all purpose)
1 tspn. Baking Powder
.25 tspn. Baking Soda
1 cup Beer (ice cold)

Procedure:
1
. Stir the beer into the dry ingredients until you have the desired consistency.

2. Batter the poached oysters and fry at 375 degrees until golden brown. Remove from the oil and dry on a towel, season and keep warm.

3. Fill the pipettes with your beer of choice. Drive one filled pipette into each crispy oyster and serve piping hot.
