Esalen
Kale Salad

Serves 4-6
Ingredients:
1 lb. tender, organic kale (Red
Russian, Siberian or Tuscan), julienned
1/4 C sunflower seeds, toasted
1/4 C pumpkin seeds, toasted
1/4 C sesame seeds, toasted
1/2 C organic sunflower sprouts
1/2 C organic alfalfa sprouts
1/3 C Bragg Liquid Aminos or 1/3 C tamari
1/3 C organic lemon juice
1/3 C flax seed oil or 1/3 C extra virgin olive oil
1/2 medium organic red onion, finely julienned
Procedures:
Emulsify the Bragg Liquid Aminos or tamari and lemon juice
with either the flax seed or olive oil and add julienned
red onion. Marinate 10-15 minutes or longer.
Toss
the julienned kale, toasted seeds and sprouts in dressing
and let marinate for at least 25 minutes.
