BLACK
TRUMPETS and
HEDGEHOGS close down
as winter ends but MORELS
and PORCINIS become
plentiful as spring starts. Food &
Beverage International chefs came up
with some great recipes using wild mushrooms
and we're sharing them with you.

THE
SPORT OF WILD MUSHROOMING Foraging
for Wild Mushrooms is a growing
sport and enthusiasts can find
small groups to go out with in
many parts of the country and
world. Here we highlight a trip
sponsored by Mexican Mushroom
Tours. They pick a different
spot to forage for mushrooms each
year.
Here is the first hand report
from our writer
Mary Buttaro.
KEEP
WILD MUSHROOMS ON HAND
You
canbuy
your wild mushrooms
in the dried form, and they keep
forever. Rehydration is as easy
as soaking them in warm water
for 40 minutes, and your gourmet
mushroom recipes are ready to
prepare. We've included a number
of dried mushrooms; porcinis,
lobsters, candy caps, morels, black
trumpets, and others to keep your
pantry stocked. Don't forget to
use the mushroom broth you create
when soaking those mushrooms!
Great chefs keep truffle
oil
on hand, along with sumptuous
truffle butter,
to enhance that deep mushroom
flavor. All are available
in our shop for you!
If
you desire a shipment of fresh
wild mushrooms, all are available
on a seasonal basis, so call the
office at 707 566 9734 to see what
can be shipped to you today. Wild
mushrooms are a delicate process,
so we can not automate this information.

MUSHROOM
AND WINE PAIRING
2004 Hunter Valley Semillon/Chardonnay
Varietal: Semillon (60%)/ Chardonnay (40%) A great
wine with mushrooms and seafood. Bouquet: Fresh
citrus with hints of green apple, nectarine and
melon with subtle suggestions of grass and soft
vanilla overtones. Palate: Bright Chardonnay
fruit with a rich honeyed vanilla character that
develops into a long, crisp grassy finish. Click

2004
Mornington Peninsula Pinot Noir This
is our recommendation for pairing with mushrooms and meat.
Bouquet: Rick aroma of luscious cherries and sweet strawberries
with a delicate touch of spicy undertones. Palate: Splendid
structure of numerous berries supplying a light sweetness
complemented with tender tannins that combine for a complex
finish. Click
