BLACK TRUMPETS and  HEDGEHOGS close down as winter ends but MORELS and PORCINIS become plentiful as spring starts. Food & Beverage International chefs came up with some great recipes using wild mushrooms and we're sharing them with you.

THE SPORT OF WILD MUSHROOMING
Foraging for Wild Mushrooms is a growing sport and enthusiasts can find small groups to go out with in many parts of the country and world. Here we highlight a trip sponsored by Mexican Mushroom Tours.  They pick a different spot to forage for mushrooms each year.

KEEP WILD MUSHROOMS ON HAND

You canbuy your wild mushrooms in the dried form, and they keep forever. Rehydration is as easy as soaking them in warm water for 40 minutes, and your gourmet mushroom recipes are ready to prepare. We've included a number of dried mushrooms;  porcinis, lobsters, candy caps, morels, black trumpets, and others to keep your pantry stocked. Don't forget to use the mushroom broth you create when soaking those mushrooms! Great chefs keep truffle oil on hand, along with sumptuous truffle butter , to enhance that deep mushroom flavor. All are available in our shop for you!

2004 Hunter Valley Semillon/Chardonnay
